Salvagno

"The Venetian origins of the Salvagno family date back to antiquity. It was only in the early 19th-century, following the fall of the Venetian Republic, that the Salvagnos moved away from the lagoon to become farmers. They focussed on cultivating olives, a relatively new pursuit in those days. As such, they decided to settle in the Veneto hills between the Lessini mountains and Lake Garda.
Their passion and business skills were put to use in the olive mill, ensuring that within a few decades, output had increased so much that, by the early 20th century, the family olive mill had grown substantially. In this process they managed to combine advanced technologies with traditional systems. This amalgamation not only led to technological innovation, but also ensured that the family produced high quality oil that is still much loved today. The oil is quite unique, being made from a special type of olives that are grown and collected by hand in olive groves about 150 m above sea level. The oil is a golden green and the flavour is strong and refined. It has a pleasing, well-rounded aroma with traces of the grassy undergrowth.
The Salvagno oil mill began the “Olivicoltura Pulita” (Clean olive cultivation) project in 1978, organising conventions for customers and the farmers who bring their olives to the mill.
Tradition, passion and research are pooled to create an oil that is well worth the five drops it has in the Ais guide (Gignano extra-virgin, 2004) and the various international awards it has received."
