Cooking Time: 40 minutes
Ingredients for 4 portions:
- 5 tablespoons of sugar
- 2 eggs (separate the yolks from the egg whites)
- 1 sachet of saffron
- 2 tablespoons of hot milk
- 270 grams of mascarpone
- 4 / 5 small cupfuls of coffee
- 1 pack of biscuits (preferably Pavesini type biscuits)
- bitter cocoa powder
Separate the egg whites from the yolks and beat the yolks with the sugar until you have a thick cream. Dissolve the sachet of saffron in a little hot milk and then add this to the sugar and egg yolk cream. Beat the remaining egg whites until stiff and dry and add them to the mix together with the mascarpone. Soak the biscuits in the coffee and place them at the bottom of a bowl to create the first layer. Then add alternate layers of coffee-flavoured biscuits and cream. Sprinkle the final layer of cream with the bitter cocoa powder. Put the Tiramisù in the fridge for a few hours and enjoy it cold.
