Red Radicchio and Walnut Salad

Ingredients:
(Serves four)

300g of Red Radicchio di Verona
2 apples (preferably green and crisp)
200g of cheese (preferably Emmental or Montasio)
8 walnuts
2 tablespoons of balsamic vinegar
4 tablespoons of extra-virgin olive oil
Black pepper
Salt

Preparation time: 10 minutes

Procedure:
Wash the radicchio, chop into fine strips and place in a salad bowl. Wash, peel and dice the apples and add to the salad bowl. Shell and crush the walnuts by hand and add to the salad bowl. Dice the cheese or cut into small pieces and add to the salad bowl. Salt and pepper to taste, then toss the salad with the balsamic vinegar and olive oil.
